Coconut Pecan “Ice Cream”

Sweet frozen banana combines with rich coconut milk to create a dairy-free treat that’s loaded with healthy fats and the many nutritional benefits that fruit provides (such as gut-healthy fiber and an array of beauty-enhancing vitamins and antioxidants).

Coconut Pecan “Ice Cream”
Ingredients
½ can full fat organic coconut milk
1 ½ frozen bananas
½ tspn vanilla extract
Hearty pinch sea salt
½ cup chopped toasted pecans
Optional: 1 tablespoon maple syrup
Method
Combine coconut milk, frozen bananas, vanilla and salt in blender and blend until smooth. For perfectly formed ice cream, pour into a pre-frozen ice cream machine for about 20 minutes (you can skip this step for ice cream that may not form into perfect scoops but will still be delicious). Stir in chopped pecans and serve with an optional drizzle of maple syrup.
